So many people have requested this recipe that... here it is! It was originally given to me by friend and fellow vegie grower - Veronica Phillips... So thanks V.
INGREDIENTS
2 1/2 cups sugar
1/2 cup butter
1/2 cup oil cream these then add:
3 eggs
1 tsp vanilla essence
1/2 cup milk
3 cups of grated zucchini then sift in dry ingredients:
2 1/2 cups plain flour
2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt 2 (or 3 )
tbsp cocoa
METHOD
Bake in 9"x13" baking tin on 325°F for 45mins or until skewer comes out clean (or in 2 round cake tins on 175°C for about an hour which works for me!)
